American Chicken Choupsey

INGREDIENTS
  • 1 Carrot parboiled
  • 8 French Bean parboiled
  • 1 Green chilli shredded
  • 1 Capsicum shredded
  • 1 Onion shredded
  • 3/4 cup shredded Cabbage
  • 1/2 cup Bean sprouts
  • 2 cups water
  • 5 tbsp Oil
  • 1/4 tsp Ajinomoto
  • 1/2 tsp White pepper
  • Salt to taste
  • 4 tbsp Tomato ketchup
  • 1 tsp Vinegar
  • 1 tsp Soya sauce
  • 3 tbsp Cornflour dissolved in 1/2 cup water
CRISPY NOODLES
  • 100gms Noodles 
  • Oil for deep frying
PROCEDURE
 To make crispy noodles, first boil them, strain & keep aside. When water gets strained deep fry the noodles in 2 batches,in hot smoking oil until crisp & golden brown. Keep aside
Scrape carrot, string french beans. Parboil them by dropping the whole carrot & french beans in 2 cups of boiling water with 1/2 tsp salt. Strain after half a minute. Cool. Shred all the vegetables. Heat 5 tbsp of Oil. Add sprouts & ajinomoto. Stir fry for a minute. Add chicken( Optional). Add remaining vegetables, pepper & salt. Stir fry for 2 minutes. Add soya sauce, vinegar & tomato ketchup. Cook for 1/2 minute. Add water. Bring to boil. Add cornflour paste, stirring continuously. Cook for 2 minutes, till thick. Keep aside. To serve spread crispy noodles on a serving platter, keeping asde a few for top. Top with prepared vegetables. Sprinkle some left over crispy noodles on top of it. Serve hot.
