Shish Kebab

INGREDIENTS
  • 2 lbs beef sirloin or tenderloin, cut into 1 inch cubes
  • 1/2 cup olive oil
  • 1 tablespoon white vinegar
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon paprika
  • 1 teaspoon garlic, minced
PROCEDURE 24 hours prior to grilling, prepare marinade by combining olive oil, vinegar, corianader, garlic, cumin, and paprika. Pour marinade into freezer bag and add beef cubes. Allow to marinate in the refrigerator until ready to grill.

Remove from refrigerator and thread meat onto skewers that have been sprayed with cooking oil.

Spray grill with cooking oil to prevent sticking. Grill for 5-7 minutes on each side or until cooked as desired.

Serve over a bed of white rice, salad.

Samak Kabab

INGREDIENTS
  • 2 lbs. fish (swordfish, halibut, or salmon)
  • 1/3 cup olive oil
  • 3/4 cup lemon juice
  • 1 teaspoon dill
  • 1 tablespoon white vinegar
  • 1 cucumber or radish or tomato
  • 1 medium onion
  • 2 red peppers
  • 1 pint cherry tomatoes
PROCEDURE 2 hours prior to grilling, prepare fish by rinsing with cold water. Pat dry with paper towel. Cut into 1 inch cubes. Set aside.

Mix olive oil, lemon juice, dill, and vinegar to make marinade. Pour marinade into large freezer bag and add fish. Make sure fish is well coated with marinade. Place freezer bag in the refrigerator for two hours.

While fish is marinating, chop vegetables. Half the cucumber lengthwise and slice into 1/2 inch pieces. Cut the onions into eights. Cut red pepper into 1/3 chunks. Set aside.

Remove fish from marinade. Discard marinade. Assemble kebabs according to taste. Many people like a combination of alternating pieces of meat and vegetables. This is entirely a matter of personal choice. It really does not affect the cooking. If you are using steel skewers, be sure to put a light coat of oil onto them before adding the fish and vegetables. They will slide on and off much easier.

Spray the grill lightly with cooking oil and place the fish kebabs on the grill. Cook for about 4-6 minutes each side or until the fish flakes easily with a fork.

Serve over white rice.

Special Mayonnaise sauce


Hey this mayonnaise sauce is so so special, because it is you who are going to make it, it is not that processed ready to use mayo, you find in market & as Jamie Oliver says, If  every kid in U.S. learns to make just 10 recipies & do not eat processed food , they can fight back obesity & go ahead for a healthy life & mark my words friends, if U.S is going to do so everyone is going to follow the example. Its time for us to make a change.

INGREDIENTS
  • 2 egg yolks ( Room Temperature)
  • 1 tsp White Vinegar
  • 1/2 tsp Powdered Mustard
  • 1 ts Lemon Juice
  • 2 Cup Olive Oil
  • Salt( To Taste)
  • Pepper( To Taste)

PROCEDURE
Put egg yolk,2-3 drops Vinegar & powdered mustard in a vessel & whisk well. Start adding oil, drop by drop,stirring continuously . When the mixture is thick & creamy add the rest of the oil in a thin trickle. Keep stirring till it comes out pale in colour. Do not make the mayo too thick  or if it happens just add a couple of vinegar drops. Continue till the oil is used up. Season with salt & pepper & a few drops of lemon juice.
Your very own, the special Home made Mayo sauce is ready, & believe me it tastes awesome!!
