Samak Kabab

INGREDIENTS
  • 2 lbs. fish (swordfish, halibut, or salmon)
  • 1/3 cup olive oil
  • 3/4 cup lemon juice
  • 1 teaspoon dill
  • 1 tablespoon white vinegar
  • 1 cucumber or radish or tomato
  • 1 medium onion
  • 2 red peppers
  • 1 pint cherry tomatoes
PROCEDURE 2 hours prior to grilling, prepare fish by rinsing with cold water. Pat dry with paper towel. Cut into 1 inch cubes. Set aside.

Mix olive oil, lemon juice, dill, and vinegar to make marinade. Pour marinade into large freezer bag and add fish. Make sure fish is well coated with marinade. Place freezer bag in the refrigerator for two hours.

While fish is marinating, chop vegetables. Half the cucumber lengthwise and slice into 1/2 inch pieces. Cut the onions into eights. Cut red pepper into 1/3 chunks. Set aside.

Remove fish from marinade. Discard marinade. Assemble kebabs according to taste. Many people like a combination of alternating pieces of meat and vegetables. This is entirely a matter of personal choice. It really does not affect the cooking. If you are using steel skewers, be sure to put a light coat of oil onto them before adding the fish and vegetables. They will slide on and off much easier.

Spray the grill lightly with cooking oil and place the fish kebabs on the grill. Cook for about 4-6 minutes each side or until the fish flakes easily with a fork.

Serve over white rice.

INGREDIENTS
  • 1/2 Cabbage Cut into big chunks
  • 2 Medium sized carrots parboiled & cut into thick rounds
  • 2 medium sized onions cut into four
  • 1 Capsicum cut into 8 pieces
  • Some green vegetables
  • Chicken pieces
  • 2 Cups water
  • 2 tbsp Soya sauce
  • 1 tsp Chilli sauce
  • 1 tsp Vinegar
  • 1 tsp Pepper
  • Salt to taste
  • 1/4 tsp ajinomoto
  • 1 tsp Sugar
  • 2-3 tbsp Cornflour dissolved in water
  • 2 Bowls Boiled & fried rice
PROCEDURE
Wash & cut vegetables & chicken pieces into big pieces.Stir fry each vegetable separately in little oil. Do not over fry.The colour of vegetables should not change & crispiness intact.Take these out into a serving dish. Heat 1 tbsp oil. Add soya sauce, chilli sauce, vinegar, salt, pepper, ajinomoto & sugar. Stir on low heat for a few seconds. Add water. Boil. Add cornflour paste, stirring continuosly. Remove from fire when thick. Add the vegetables to the sauce & serve hot with boiled & fried rice.

Traditional Pakodi Modernized!!



These moong dal pakodi are a part of my Garhwali tradition, made at every special occasion, be it a Birthday,house warming ceremony or just anything good. They have been a part of our tradition since ages & would like you to see the place to where I belong. A very simple place, away from everyday hustles of life,people are simple & so is the food, not at all spicy but very delicious!!

Although importantly I didn’t let the pakodi be in its original form, I just made a little variance of it by turning it into cutlet form. Just give it a try. you’ll love it anyways:)
Paste of Moong dal, onion, salt & turmeric.

Onion sliced & dipped in Vinegar.

Paste put on a tawa & pressed with fingers.

Upper golden side of cutlet, other side getting fried.

Ready to serve, garnished with Onion slices.

INGREDIENTS
  • 1 Cup washed Moong dal(Soaked overnight in water)
  • 1 Onion Chopped
  • 2 Green chillies
  • 1 tsp Turmeric powder
  • Salt to taste
PROCEDURE
Put soaked dal in a grinder & grind it coarsely along with little water & chillies to form a paste.Add Chopped onion,salt & turmeric powder & mix well. Put some oil in a tawa & heat it up. Now lower the flame & put 2 big spoon of mixture on tawa & press slightly with fingers. Now let it be golden brown on one side & turn on the other side & wait till it turns golden & crispy.
Serve with mint chatni, garnished with chopped coriander & vinegar dipped Onion rings. Serve them hot along with Litchi juice.
Although in the original version we do not use onions as it isa first offered to God & therefore usage of onion is prohibited!!

Veg Pizza

INGREDIENTS
  • 1 Readymade Pizza Base
  • 100gms Pizza Cheese Grated
  • 1/2 Onion Chopped
  • 1 Capsicum Chopped
  • 100gms Fresh Cheese Chopped
  • 1 Tomato Chopped
  • 3 Baby Corn Cut into thin slices
  • Few Olives
Tomato Spread
  • 1 Tbsp Oil
  • 1 Tsp Garlic Paste
  • 1/2 Cup Tomato Puree
  • 2 Tbsp Tomato Ketchup
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
PROCEDURE
For tomato spread mix all the ingredients in a bowl & microwave for a minute.Spread on the pizza base.
Arrange the vegetables & sprinkle salt & pepper. Add cheese toppings. Bake pizza for 8 minutes. The amazing pizza is ready to serve!

Simple fish Chowder

INGREDIENTS
  • 1 large Onion (Chopped)
  • 1/2 cup Butter
  • 4  cup Water
  • Potatoes ( peeled & diced)
  • 1 kg fresh or frozen cod fillets, cut into large chunks
  • 3 tbsp lemon juice
  • 2 cup milk
  • 350ml evaporated milk
  • 21/2 tsp salt
  • 2 tsp pepper
  • Chopped fresh parsley
PROCEDURE
In a pan, saute onions in butter. Add water & bring to boil. Add potatoes, cook for 10 minutes. Add fish & lemon juice, reduce heat & simmer for 10 minutes. Add milk, salt & pepper. Garnish with parsley & serve hot!!

Indian Masala Papad

This serves as a great starter before the main course. The spiciness of this papad opens your taste buds for a great meal ahead!!!

INGREDIENTS
  • 4 Papad (Flat Bread Wafer)
  • 1 Tablespoon Hara Dhania(chopped)
  • 1/2 Onion(chopped)
  • 1/2 Tomato(chopped)
  • 1 Teaspoon Lemon juice
  • 1 Teaspoon Chat Masala
  • Oil
  • Salt
PROCEDURE
Put oil on both sides of papad with the brush,put in microwave on high for a few seconds, turning it upside down after a few seconds or simply in a tawa & roast.Do the same & keep aside. Now  mix all the above ingredients except papad & spread over papad.
